Ok, so I wouldn’t really call this dessert a cobbler, but I couldn’t pick anything else! It’s full of awesome berry goodness (strawberries and blueberries for mine) and a totally delicious sort of cobbler-like cake. I’ve actually never made a cobbler, so I don’t know how to describe it other than out of this world! A friend emailed me this recipe from their personal collection a while back and they just called it the magic berry cake. It’s very simple to make… the hardest part is trying to only eat one piece!
Ingredients:
- ⅓ cup butter
- 1 ½ cups flour
- 1 ½ cups sugar
- 1 ½ cups milk
- 2 teaspoons baking powder
- ½ teaspoon cinnamon
- ½ teaspoon salt
- 5 cups berries
- ⅓ cup brown sugar
- ⅓ cup nuts (I left these out)
Preheat your oven to 375°. Place the butter in a slightly greased 9×13 baking dish. Put it in the oven while it is preheating. Keep an eye on it and take it out once the butter is melted. Meanwhile, in a large bowl, mix together the flour, sugar, milk, baking powder, cinnamon and salt. Once it forms a nice batter, pour it into your baking dish that has the butter in it. Don’t stir it up! Just let it ooze with buttery goodness. Take your berries and sprinkle them on top of the batter. Top the berries with the brown sugar and nuts, if you are using them.
Quick note: you can use any combination of berries that you like. I think that the strawberries and blueberries go well together (2 ½ cups of each), but use whatever you want! Bake this berry dessert for about 50 minutes, give or take. You want the top to be browned nicely.
This delicious berry cobbler-like heavenly dessert is perfect with ice cream (such as my homemade vanilla ice cream – the recipe for that can be found here!). It’s a wonderful combination of berries and cake, the ratio is just right in my opinion. If you think it’s too cakey, add more berries… if you think it has too many berries, don’t add as many berries next time around. Even my husband loved this dessert and he doesn’t even like blueberries! It really is amazing. Enjoy : )
