Broccoli and mushrooms are one of my favorite sides to make. The biggest reason is that I can change the seasonings/sauce to fit with the meal I am cooking. When I make something like sweet and sour chicken, I add a little soy sauce, garlic and ginger to the mix. If I am cooking something like tilapia with parmesan and garlic, I just add some garlic and Italian herbs to the broccoli and mushrooms. It’s a simple base recipe that you can change to fit your meal, which makes it perfect for anything! Not to mention it’s a great combination of delicious veggies. Ingredients:
- Mushrooms, sliced
- Broccoli, frozen
- Butter or olive oil
- Salt
- Pepper
- Seasoning and sauce of your choice!
I normally use twice as much broccoli as I do mushrooms, but you can use any combination you want. Try this basic recipe with any seasoning of your choice. I mentioned two of the mixes I have used before, but one of my other favorite additions to the broccoli and mushrooms is rosemary. It’s simple, but delicious. Get creative!
So this is super simple. First, I slice up my mushrooms and get a pan or skillet heating with some cooking spray and olive oil or butter. I normally use olive oil, but butter works great too. I toss in my mushrooms and let them sauté a little. While they are cooking, I microwave my broccoli for a bit. I like to do this because I have found they leave too much liquid in the pan if I cook them with the mushrooms. Once they are slightly warm, I make sure they are dried off a bit. Then, I throw in the broccoli with the mushrooms. This is when you want to add whatever seasoning or sauce you want to use. Mix it up well and let it cook a bit.
