Chickpea Casserole

vegan chickpea casserole

Why hello delicious. I found this yummy recipe a while back over on VegWeb. I only had to make it once and I knew it would be a permanent friend of mine. It's creamy like a casserole should be and I just loooooove the chickpeas in it. My husband takes it to lunch quite often and has demanded more broccoli. I gotta say, that's a pretty cool thing to hear! I have made a few changes, but not many. It's a simple recipe too so that's a huge plus. I actually just cook my rice in a pot, rinse it … [Read more...]

Lentil Soup

I love soup all year 'round so don't be a hater and tell me it's not soup season! Spring is just as deserving of this deliciousness as the other seasons :) This has become my favorite soup too - I keep it stockpiled in the freezer just to make sure I always have some handy! It's simple, healthy, delicious and beautiful. Can't complain about any of that, right? I attempted to cut my carrots into heart shapes. I saw it on Pinterest and thought 'ohhhh I can do that!' Buuuuuut I forgot how … [Read more...]

So that title is a bit much, I know! But I tried this recipe and really wanted to share it. My picture is not nearly as pretty as the ones over at Cheap and Simple Vegan, but it'll do! I had been meaning to make this recipe for quite some time, I just kept eating all the kale as chips! HA! I guess that's a good problem to have? So when I finally stop stuffing my face with super awesome kale chips, I made this awesome dish. I thought it was delicious, but I used a pan that wasn't friendly and my … [Read more...]

Vegan Shepherd’s Pie

vegan shephard's pie via my vegan cookbook

This recipe is not quick. I will say that up front so you aren't overwhelmed! I enjoy cooking so the entire process was a lot of fun, but it does take quite a bit of time to put together. It is SO worth it though. Seriously! I loved this recipe to pieces - it was just the best combination of ingredients. One of my favorite vegan food blogs EVER is My Vegan Cookbook. I have made tons of the recipes there and have loved every single one of them (especially the pecan pie!!!). So when I saw … [Read more...]

Baked Falafal

baked falafal

I super mega love falafal. It's crazy delicious, but I am not a fan of how greasy it can get when fried. Well, I am not a fan of fried food in general so it's meh no matter what. Baked falafal, on the other hand, is sooooo perfect. You get all the yummy flavors without that fried greasy taste to cover it up! My husband first tried falafal when we went out to a mediterranean place to eat. He got some wrapped up thing with fries and I got falafal with lots of veggies to go with em. He was … [Read more...]
