I love pesto, really I do. There’s a story my husband likes to tell about the time I was eating some pesto and pasta so fast that somehow I got pesto on my forehead. HA! It has such great flavor and if you make it yourself, oh my gosh, you will see what I mean… it’s so fresh and the color is amazing. Pesto goes great with so many things! I have a wonderful breakfast recipe using pesto that I can’t wait to post, but it’s good for more than just pasta, I promise. Making this pesto doesn’t take much work, so if you are a fan, give it a try.
Ingredients:
- 2 cups fresh basil
- 2 cups parsley
- 8 cloves of garlic
- 1 teaspoon salt
- ½ teaspoon pepper
- 1 cup parmesan
- 2/3 cup oil
I don’t use any nuts in my pesto. They aren’t bad; I am just not a huge fan of what they add to pesto. If you do like the flavor, feel free to add pine nuts or walnuts or well, any type of nut you want really! Also, this recipe makes about 2 cups of pesto.
The process is super simple. Put the basil, parsley and garlic in your food processor. There’s no need to cut anything up, just throw it in.
Mix it a bit, and then add in the sale, pepper and parmesan cheese. Blend it a bit more, making sure to scrape the sides every once in a while. Once everything is well blended, you want to gradually add in the olive oil. Just add a little bit, blend, and repeat until you are out of oil.
This pesto is so bright! I just love it. Feel free to add more garlic or parmesan if you like, as well as the nuts. This is so much better than store bought, I promise. The flavor is crazy delicious and the fresh herbs just jump out at you. I can’t wait to post some recipes using this wonderful homemade pesto!
