I have to say, out of all the breakfasts I have made, this has got to be right up there at the top. It combines two of my favorite things: pesto and a Portobello mushroom! Everything goes together so well… the Canadian bacon and eggs, the Portobello and pesto… it’s just perfect! I made this last for my anniversary breakfast and it was beyond wonderful. It’s even better if you use homemade pesto (check out that recipe here!)! This breakfast is super delicious and would be a nice change for a weekend!
Ingredients:
- 2 large Portobello mushrooms
- Olive oil
- Salt
- Pepper
- 2 to 4 slices Canadian bacon
- 4 eggs
- Dash of milk
- Pesto
- Parmesan cheese
Heat a large skillet over medium heat. First, you want to scrape away the dark part of the inside of the mushroom caps. Be careful not to break or rip them.
Once you have rinsed the mushrooms off, drizzle each side with a little oil. Place them on your skillet and sprinkle a little salt and pepper on top. You want to cook these about 5 to 8 minutes on each side (depending on how large the mushrooms are). They will start to turn tender and juicy when they are done. Once they are ready, place them with the top side down on your plates.
In the same skillet, cook your Canadian bacon. This really only takes 30 to 45 seconds per side. I only use 1 piece for my serving, but my husband likes having 2 slices. Once they are done cooking, place them on top of your mushrooms.
In a small bowl, whisk together the eggs and just a little bit of milk. Sometimes I add in different things to the eggs, such as garlic, tomatoes or spinach. They are great if you leave them alone though! Pour the eggs into your skillet and cook til they are done! Spoon the scrambled egg on top of your mushroom pile. Drizzle your pesto over everything and add a little bit of parmesan. Sometimes I top mine with some tomatoes or fresh basil.
This breakfast looks amazing, right?! Every time I make it, I am amazed at how simple it is. Not to mention, it tastes completely amazing! If you are looking for a different breakfast, try this out… it will wow anyone!
