Spanakopita actually means Spinach Pie in Greek. It's a savory sort of pastry, made with spinach, feta cheese and onions. It's fairly simple and if you've never had spanakopita, now is that time! Creamy Mushroom and Spinach Rice

This rice casserole is so perfect! It's creamy and filling and bursting with flavor. I got the original recipe from some website, but I have changed it over time. These little frittatas are light, fluffy and very delicious. You can customize what goes in them, even down to each single muffin tin. Everyone can have their frittata the way they want! Chicken and Rice Casserole

My mom used to make this chicken and rice casserole that I just absolutely loved. It was so simple to make, but it was so delicious! Chicken and Spinach Quiche

This chicken, bacon, cheesy spinach quiche rocked my world! This was my first attempt at making a quiche and it won't be my last. I'm not too sure if I made it the way a quiche should be made, but it turned out awesome. This did take a bit of work, but it was well worth it if you ask me!
