Creamy Chicken Casserole

creamy chicken casserole

This creamy chicken casserole is something I make for my grandparents. It is a wonderful freezer meal and really easy to throw together. It's awesome to have freezer meals packed away for those busy nights. It works out great around my house too because the hubby and I eat different meals most of the time so I have a list of freezer meals I try to keep on hand incase I don't have time to cook up both in one evening. My grandpaw really loves this dish! Everytime he pulls one out of the … [Read more...]

Orzo with Basil and Red Bell Pepper

orzo salad

I love pasta, but the kind I can eat cold is my favorite. Plus basil is something I ask for extra of on pretty much everything it might be good on! Especially pasta dishes. I normally throw this together on a Sunday night so that the hubster and I can have it for lunch during the week. You could even throw in some chicken if you'd like some meat or maybe some grilled tempeh or tofu for no meat eaters! I love it just the way it is - easy, delicious and pretty! This could even be a nice little … [Read more...]

Vegan Green Bean Casserole

vegan green bean casserole

There is a lot of green bean eatin' going on in this house! Green bean casserole is one of the first vegetable dishes I got my husband to eat consistantly (and enjoy and beg for!) and I have changed it up quite a bit over the past 7 years. Then I started making my ritz topped green bean casserole.  This was mainly for my husband who loves sour cream and ritz crackers. Then, I decided to make a 'healthier' green … [Read more...]

Recipe Favorite : Pepperoni Biscuit Poppers

pepperoni biscuit poppers

I asked my husband what some of his favorite dishes were that I cooked for him... this topped the list. Which is pretty awesome if you ask me because they are SO easy. I posted about them a hot minute ago and wanted to revisit the recipe! And it's funny because when I looked at the pictures on the old post, one of the last ones has my husband holding up a pepperoni popper and you can see his Diet Mountain Dew in the background. Not much has changed except he drinks the 2 liter version now... … [Read more...]

Orzo Bake

orzo bake

Don't ask me why, but orzo is my favorite pasta. It's so cute! I buy the whole wheat kind (all pasta I buy is whole wheat, or I hope...) and we use it in all sorts of things. This is one of my favorite ways to serve it. Now, it IS vegan and requires nutritional yeast. It's a staple in my kitchen - I even use it in the non-vegan meals I make for my husband, though he probably has no idea! It is not like the yeast you probably imagine. It is not used for baking. It has a sort of cheesy, smoky … [Read more...]
