Zucchini ‘Pasta’

I’ve been a busy little bee lately! So much stuff going on, mainly thanks to this being the last semester of college (WOOOOO for that!) so I wanted to post a recipe that is SUPER easy. This zucchini ‘pasta’ is awesome. It’s healthy, obviously and is great if you are watching your carbs, but miss that pasta feeling. I tweeted about another post I found recently so I wanted blog about how much I love this stuff so that you guys might give it a try! Seriously, even if you just try it once… you’ll make me happy and who knows, I might do a cartwheel or two : )

Ingredients:

  • ZUCCHINI!!!

Ok really, that’s all you technically need. But think of the zucchini as your pasta. So you could top it with a nice pasta sauce, or maybe some pesto, or even just butter and cheese! Sautee some veggies and mix it up, sprinkle some nutritional yeast on top… whatever your little heart desires!

All you need to do is get out your snazzy little peeler. Take off the peel of the zucchini and then just shave off strips into a bowl. You can make them long, short, small, whatever! You can also cut them with a knife, but I just find this way to be so much faster. It comes out sorta like large fettucini. I love it.

Top it with your favorite pasta topping and ta-da! Simple, healthy and delicious! You really have to give this zucchini ‘pasta’ a try, even if it’s just to see me do a cartwheel as a thank you : )
